Just a short newsletter today…

 

First off, some of you may have noticed Krystie’s ever expanding waistline. Yes Krystie has been eating too many pies 😉

 

Only Kidding!!

Krystie is once again pregnant.

 

 

 

 

 

 

At least this time, maybe I will know what I am doing 🙂 MAYBE!

 

Krystie’s side note.

 

The night Milly was born, Paul may have been a little drunk. He may have had no clue about timing contractions. He may not have believed I was in labour and therefore didn’t get the pool ready. When he finally got it ready it may have been too hot to get into and he may have been moaning about having sore knee as he had to kneel down for a while by the pool.

 

With Anzac day on Tuesday, Krystie got her baking on… and ice cream and chocolate but that’s another story. Krystie made Anzac Biscuits and they tasted amazing

 

Here is the recipe

 

Anzac Biscuits

 

  • 1/4 cup dried dates
  • ½ cup coconut flour
  • 1 cup rolled oats
  • ½ cup desiccated coconut
  • ½ cup melted coconut oil/butter
  • 2 T honey/maple syrup
  • 1 tsp baking powder
  • Pinch of salt

  1. Pre-heat the oven to 180 degrees celsius and line a baking tray with baking paper.
  2. In a food processor place the dates and coconut/almond flour, blitz until the dates are very finely chopped.
  3. Add the desiccated coconut, rolled oats, baking powder and salt and mix through.
  4. Add the coconut oil/butter and honey/maple, combine all the ingredients.
  5. Heap the mixture onto a teaspoon and roll into balls, place the balls onto the tray. Using the back of a wet fork, press the balls into biscuits.
  6. Place in the oven and bake for 10 minutes.
  7. Remove from oven and allow to cool and harden (best you do this as they are crumbly when hot)
