Hope the weekend bought you some restorative rest, laughter, movement and nourishing food.
On Saturday evening we hosted our regular healthy cookbook crew which had us cooking and eating curries. For the cooler months, I find my body craving warm, nourishing meals and a good curry are at the top of my list. We had a selection of venison, pork, dhal and prawn curries to choose from – all delicious. To finish the meal, we had a yummy gf apple cake and keto chocolate torte. We were pretty much finished the meal when we realised we had not taken any photos, however there was a little chocolate torte left over so we took a pic, and thought we would bring you this recipe today.
Simple to make, delicious and low in sugar. Paul did comment that this is one of the best “no sugar” cakes he has every eaten.
Base ingredients:
- 2 cups almond flour
- 1/4 cup unsweetened cocoa powder
- 1/4 cup melted coconut oil
- 2-3 tablespoons stevia/monk fruit
- 1/2 teaspoon fine sea salt
Chocolate Toppings:
- 1 1/2 cups coconut milk (I used coconut cream)
- 450g dark chocolate, roughly-chopped
- 1 teaspoon vanilla extract
- 1/4 teaspoon fine sea salt
- topping: flaky sea salt
Combine all base ingredients together, add to a lined tin and smooth down. Bake in oven 180 degrees for 10 minutes or until it starts to brown on top (not burn – keep an eye on it).
While the base is cooking, pour the coconut cream/milk into a pot, warm through then take off heat and pour in the chocolate. Leave for 10 or so seconds and then stir through. Once all stirred through, add other ingredients and pour over the base. Put in the fridge to set for at least 2-3 hours – or overnight.
Before serving add flakey sea salt over the tart. We served with plain coconut yoghurt but a good dollop of cream would go down nicely if you are tolerant to dairy.
